Barbie Doll cake

My little darling turned 5 yesterday...and finally here is the Barbie with a blue dress!

Hours of  practise sessions, test runs, cakes not coming out of the tin, swearing and all the messy kitchen was worth when I heard her tell her cousin "Idu namma amma naigoskara special aagi madiddu gotha :) "

Vegetable Biryani from Nayana's Kitchen

On-pot meals are soo easy to cook and tasty too. This month for the potluckparty  I had to cook Vegetable Biryani from Nayana's blog.

I have slightly modified the recipe to suit our taste buds

You need:
Cut vegetables - 1.5 cups (carrots, french beans, peas and cauliflower)
Onion - 1 cup chopped
ginger, garlic, coriander and green chillies paste - 4 tbsp
chillie powder - 1 tbsp
clove, cinnamon and cardamom powder - 1 tsp
turmeric powder - 1 tsp
Ghee
Salt

For the rice:
Rice - 1.5 cups (preferably basmati)
Curd - 1 cup
Cloves - 3
Cardamom - 2
cinnamon - 1" stick
pepper - 1/2 tsp
Bay leaf - 2
Ghee - 2 tbsp
Salt

For the Garnish:
Onion - 1/2 thinly sliced
Raisins - 15
Cornflour - 1  tsp
Ghee - 2 tbsp
Salt

Method:

For the garnish :

Sprinkle salt on sliced onions and mix .
After 10 minutes squeeze the water out of them.
Sprinkle cornflour on them . (this ensures that your onions become crisp very fast while frying)
Heat ghee in a  non stick pan and fry raisins till golden.
Keep them aside and in the same ghee fry onions till crisp.
Keep the onions aside.

For the rice :

Wash and drain the rice.
Heat ghee in a big pan and add all the masala.
When they give out nice aroma add washed and drained rice and stir it for 5 to 10 minutes.
Add salt and whisked curd and 3 cups water and cook till almost done with .
Don't cook the rice fully or else it will break.
Spread the rice on a big flat plate and allow it to cool.

For the vegetable :
Heat ghee in a pan and saute onions till transparent.
Add the green paste and fry till the rawness is gone.
Now add all the vegetables and fry for a min
Add all the masala powders and salt and cook till almost done.

Arranging the biryani :
In a broad microwavable dish arrange the rice layer at the bottom.
Spread a layer of vegetables on it .
Again repeat with the rice and vegetable layer.
On top spread all the remaining rice .
Now bake the dish in oven for 10 to 15 minutes at 180C

Garnish the rice with raisins and onion.

Vanilla Cake with Butter Cream Icing (practice session 2)

This month is A's birthday and she wants to have a "Barbie Doll Cake". And we need a eggless version. I have never done Buttercream icing designs on cupcakes. I went and attended a workshop for butter cream icing with Marina and what an eye opener it was.

Aloo Muttar Kababs (Potato Peas Kabab)

My little darling is turning 5 this month and I am trying some party food recipies before deciding on what to make for her birthday party. So here is my trail of quick and easy Aloo Muttar Kababs

You need:
Potato - 3 medium sized boiled
Onion - 3/4 cup finely chopped
Peas - 1/2 cup, boiled and coarsley chopped
Green Chillies - 4 finely chopped
Coriander leaves - 10 sprigs finely chopped
Kasoori methi - 1tsp
Salt, Rock salt, Chat masala, Red chillie powder as per taste
Bread crumbs for rolling 
Corn flour - 3 tbsp
Oil for deep frying



Method:
Prepare cornflour mixture by adding little salt and water to the cornflour. The batter should be thin and runny.
As usual I used my chopper to make bread crumbs, chop onion, peas, green chillies and coriander leaves
Mash the potato. Mix 1/2 cup onion, 1/2 green chillies, 1/2 coriander
Add salt, kasoori methi and mix well
Make ping pong sized balls and keep aside
Mix the chopped peas, remaining onion, green chillies, coriander leaves, rock salt and red chillies (if reqd)
Flatten the potato ball and stuff the peas mixture into it
cover the peas mixture will the potato and shape it like a cylinder
Keep aside. Repeat this for all the potato balls
Heat oil
Dip the potato cylinders into the cornflour batter, roll the cylinders on the bread crumbs and drop it into the oil
Fry till golden brown
Serve with Green chutney

Capsicum Muttar Baath

When MIL asked me to make lunch today, I wanted to do something quick and easy. Monday Blues!!!

Here is what I did:



You need:
Rice - 2 cup cooked
Onion - 1 thinly sliced
Capsicum - 1 cup cubed
Peas - 1/2 cup (I used frozen)
Salt

For the masala
Cardamom - 3
Cloves - 2
Cinnamon - 1" stick
Pepper corn - 2
Urad dal - 3 tsp
Red chilli - 3
Green Chilli - 5 (adjust as per taste)
Onion - 1 (cut into quarters)
Cilantro - 10 sprigs
Pudina leaves - 4 sprigs
Oil

Method:
For the masala
Heat 1 tsp oil
Add the onions and fry till almost brown
Add the Green chillies and fry for 2 mins
Keep aside
In the pan (wipe off the oil) add urad dal and fry till golden
Add Red chillies and fry
Remove and keep aside
To the same pan add cloves, peppercorn, cardamom, cinnamon and fry for 1 min on medium flame
Grind everything together (preferably with no water) into a fine paste

In a pan heat 1 tsp oil
Add the capsicum and fry for 2-3 mins on medium flame till the capsicum become tender
Remove and keep aside
Add the peas and fry for 1 min on medium flame
Remove and keep aside
Add 1 tsp of oil and fry the onion till translucent
Add the masala and fry for another 2 mins
Add salt and mix well
Add in the capsicum and peas
Mix well. Cook covered for 2 mins on medium flame
Add the rice.
Mix well. Cook covered for 10 mins on medium flame
Serve hot with Raita of your choice.

I served it with Onion and Tomato Raita - mix 1 cup tomato finely chopped, 1/2 cup onion finely chopped, 1 tbsp cilantro finely chopped, 1 pinch pepper, salt, 1 cup curd.
